Where Did the Name Fajita Come From?

Currently, fajitas are prevalent in a huge range of Texan and Mexican restaurants. The meat that is in a fajita can vary, from seafood to steak to chicken. When the dish was first made, the meat used was usually unwanted part of the cow. This was primarily the skirt steak, as it was seen as being low-quality and tough. The word fajita actually has Spanish origins, from Faja. This translates to girdle, so the word Fajita means little strap.

The Start of the Fajita

Fajitas were created around the 1930s. Mexican ranch workers were often paid in meat, but this was usually the head, entrails and skirt steak, or the least-wanted parts of the animal. Workers had to learn how to turn undesirable products like this into tasty meals, and that is when they started to use grilled and marinaded meat in tortillas. Ever since then, workers have taught themselves how to transform undesirable chunks of meat into a meal that can then be consumed by dishing up the grilled marinated meat onto tortillas. Since then, the dish has been served as a campfire meal. It has been passed down from generation to generation, but many never thought it would hit the restaurant scene.

The Rise in Popularity of the Fajita

At the end of the 1960s, a man called Sonny Falcon worked at the Guajardo Cash Grocery and he began experimenting with meat. He then set up a fajita stand 9 years later and sold them to huge crowds of people. Other restaurants then put the meal on their menu as they saw that it had potential.  The 1970s was a huge decade for the fajita as they were sold across many restaurants. Chefs began to cook them, but they changed the recipe a little and they also started to use soft sirloin as opposed to using skirt steak.

The main reason why fajitas were so great was that the gave ranchers the meat, vegetable and carbohydrates they needed to refuel after a long day. It was also a very cheap, quick and easy meal to prep, which helped to rocket the popularity of the meal overall. Marinading the meat helped to make it far more tender and flavorful as well, and this helped to push the meal from being for ranchers to being a solid menu item that the whole family can enjoy.
